Pink Sauce Pasta
Ingredients (serves 2) 2 servings of pasta 4 cloves of garlic 1 small onion or shallots-equivalent 1 cut of butter 1/2 cup cream 1/2 cup milk 4 tomatoes 1/2 box of mushrooms 1/2 bag of spinach Oilive oil Italian herbs seasoning (to taste) Black pepper (to taste) Salt (to taste) Chilli flakes (to taste) Steps 1. Cook pasta in salted water (and some olive oil) for 9min until al dente. Remove from heat and set aside. Keep the pasta water. 2. In a skillet, heat up the butter and 2 teaspoons of olive oil. 3. Add in the shallots and sauté for 1min. 4. Add in the mushrooms and sauté for 2min. 5. Add in the garlic and stir-fry for 1min. 6. Add in the spinach and stir-fry until it wilts. 7. Add in the tomato puree and simmer. Add in the seasonings as desired. 8. Add in the cream and milk and simmer. 9. Add in the pasta and serve when it is heated back up. To make tomato puree 1. Make a 'X' cut on the bottom side of the tomatoes. 2. Add the tomatoes to boiling water for 5-10min. Remove the skin and wash them until cold water to stop the cooking process. 3. Grind the tomatoes in a grinder until they become puree (no need to be too long). |
