Sauteed Spinach Mushroom
Ingredients (serves 2) 1 tablespoon olive oil 1 small onion chopped 1 cup chopped portabello mushrooms 3 cloves minced garlic 1 tomato chopped 1 pack of baby spinach salt to taste black pepper to taste 2 tablespoons of grated parmesan cheese (optional) Steps 1. Heat 1 tablespoon of olive oil over medium heat. 2. Add onion and saute until soft (3-5 min) 3. Add mushrooms and saute for 4-5 min. 4. Add garlic and saute for 1 min. 5. Add tomato and cook for 1-2 min. 6. Remove from heat. 7. Heat 1 tablespoon of olive oil over medium heat. 8. Add spinach, salt, and pepper. 9. Cook and toss spinach until it begins to wilt (1-2 min). 10. Add onion mixture and mix well. 11. Toss and cook until spinach looks good. 11. Sprinkle with parmesan cheese to serve. |
