Salmon Salad
Ingredients (serves 2) 1 box of arugula salad 1 box of ice plant 1 salmon fillet 1/2 box of cherry tomatoes 1 lemon 100g pine nuts 1 tablespoon of olive oil 1 egg Italian herbs seasoning (to taste) Black pepper (to taste) Salt (to taste) Steps 1. Heat 1 tablespoon of olive oil over medium heat. 2. Place the salmon fillet skin-side down and immediately reduced to low heat and cook for 2 minutes. 3. Season the salmon fillet with salt, black pepper, and Italian herbs seasoning. 4. Flip the salmon and cook for another 2 minutes. 5. Prepare a salad bowl and place the arugula, followed by the ice plant. 6. Slice the cherry tomatoes into halves and place them in the salad bowl 7. Slice the lemon and place them into the salad bowl 8. Remove the salmon from heat and place it into the salad bowl 9. With the remaining oil from cooking the salmon, place in the pine nuts and toast then till they turn slightly brown. 10. Remove the pine nuts from heat and drizzle them over the salmon and salad. 11. Enjoy! |
