Japanese Beef Rice Bowl
Ingredients (serves 2) 250-350g beef slices 1 onion (sliced) 2 tablespoons light soy sauce 1 tablespoon dark soy sauce 1 tablespoon oyster sauce 1 tablespoon sugar 1 tablespoon corn starch 1/2 cup water 2 eggs Steps Beef Slices 1. Prepare a bowl of boiling water. Add in the raw beef slices and fish them out when they turn colour. 2. Prepare the sauce mixture: light soy sauce, dark soy sauce, oyster sauce, sugar, corn starch, water. 3. Slice the onion. Heat oil in the pan and add in the onions. Stir till the onions are fragrant and soft. 4. Add in the beef slices and stir. 5. Add in the sauce and mix well. 6. Remove from heat and place the beef slices onto the rice. Onsen Egg 1. Place egg in a container and add boiling water till the egg is completely submerged. 2. Remove the egg gently at the 10 mins mark. Crack the egg into a separate bowl and place it gently above the beef rice bowl.

Steamboat & Grill
Ingredients 200g of meat for each pax; half for steamboat half for grill 2 soup bases Mushrooms Mini cabbage Lettuce (to eat with the meat) Sesame sauce Fish balls with fish roes Prawns Crab sticks Egg Noodles Ngoh Hiang Potatoes (the smaller the better) Leek Spring onion Coriander Tomatoes (optional) Chicken stock (back-up)

Japanese Soba Noodles
Ingredients (serves 2) Soba noodles (buy those packets which have separated based on serving size) Iced water Ice cubes 1 spring onion Wasabi (optional) Seaweed (optional) Steps 1. Prepare ice cubes and iced water. 2. Boil water in a large pot. Add the soba noodles to the boiling water and stir it once in a while so that the noodles do not stick to each other. 3. Once the noodles are tender (around 5 mins), drain the soba noodles in a sieve and rinse them under cold running water to get rid of excess starch. 4. Drain the noodles completely and transfer the noodles to a large bowl of iced water. Chill the noodles for 30 secs, then drain well. 5. Add ice cubes to the bamboo sieve/mat and place the noodles on top of the ice cubes to keep it chilled. Add some wasabi at the side. 6. Prepare the dipping sauce and add spring onion and seaweed slices (very thinly sliced) to the dipping sauce. 7. Serve.

Beef Burger w Mini Potatoes
Ingredients (serves 1) 1 beef patty (see picture below for the brand I used - it's average) 1 tomato (small) 1 lettuce (iceberg lettuce is good) 1 slice of cheddar cheese 1 burger bun (can buy from NTUC) 2-3 mini potatoes 4 slices of butter 1 sachet of chilli sauce 1 sachet of tomato sauce mustard (to taste) Steps For beef burger 1. Melt 2 slices of butter in the pan. Slice the burger buns and add them to the pan. Remove from heat once the buns are slightly charred (around 1 min each side) 2. Melt 2 slices of butter in the pan. Add the patty and cook them on both sides. 3. Once the patty is almost fully cooked, add the cheese slice on top of the patty while it is still in the pan. Switch to low heat and cover the pan to let the cheese melt. Remove from heat once the cheese has melted. 4. Apply a layer of mustard on the bun (base). 5. Add a layer of lettuce. 6. Put the beef patty (with cheese) on top. 7. Apply a later of tomato sauce. 8. Add a layer of tomato slices. 9. Add another layer of lettuce, and end off with the bun (top). Use a toothpick to secure the burger layers. For mini potatoes 1. Skin the potatoes and half them. 2. Rinse and dap-dry, and put them in the air-fryer, 180 degrees for 10 mins. At the 5 mins mark, flip the potatoes around. 3. Remove from heat and serve. Add chilli sauce if preferred.

The Perfect Sunny Side Up Egg
Ingredients (serves 1) 1 tablespoon of oil 1 egg Steps 1. Heat up the oil in the pan on low-medium heat. 2. Crack the egg in a bowl and gently add the egg to the pan. 3. Keep scooping the oil around the pan and drizzle them onto the egg to cook the side facing up. 4. Remove from heat and serve.

Cantonese-style Steamed Fish
Ingredients (serves 2-4) Fish (as many as you can afford) 8-10 slices of ginger Spring onion Coriander (optional) 1 tomato (small, optional) 2 tablespoons oil 2 tablespoons light soy sauce 1/4 cup water Steps 1. Clean the fish and make diagonal cuts along the skin. 2. Put 1/2 of the ginger slices that you've prepared and 1/3 of the spring onion on the plate with the fish. You can stuff a few slices in the fish's abdomen(which should already be sliced open). 3. Steam for 3 mins. Remove the ginger slices and spring onion from the fish and pour away the water from the steaming. 4. Add the remaining ginger slices and spring onion and continue steaming the fish for 3 more mins. Add sliced tomatoes if you wish. 5. Use a chopstick to check if the fish is cooked. If the chopstick can go through the fish smoothly, then it is cooked. If the fish is slightly on the thicker end, might need to steam 2-3 mins longer. Remove from heat and plate it. 6. In a separate wok, add oil, light soy sauce and water. Once it bubbles (10-20 secs), remove from heat and drizzle the sauce onto the fish. 7. Add coriander and serve.

Air-fried Chicken Wings
Ingredients (serves 2) Mid-joint chicken wings (8-10 pieces) 1 tablespoon oyster sauce 1 tablespoon Chinese cooking wine 2 tablespoons light soy sauce 1 tablespoon sugar 1/2 tablespoon dark soy sauce 1/2 tablespoon chilli powder (optional) 1/2 tablespoon chicken essence powder (optional) Steps 1. Make some diagonal cuts on the chicken wings. This would allow the marinate to seep in adequately and ensure that the insides are cooked later. 2. Mix the chicken wing with all the other ingredients in a ziploc bag. Seal the ziploc bag and put it in the fridge for 1-2 hours. Occasionally take the ziploc bag and mix around. 3. Air-fry the chicken wings at 180 degrees for 10 mins. Flip and continue air-frying at 160 degrees for 8 mins. (Note: Do not place the chicken wings on top of each other! If your air-fryer is too small then cook in batches.)

Green Bean Soup 绿豆汤
Ingredients (serves 6) 200g green beans 1 cup candied winter melon (optional) 1/4 cup rock sugar (black or white) 1.8 litres water Steps 1. Soak the green beans overnight in a bowl of water. 2. Rinse the green beans and put them into a pot. Add 1.8 litres of water and bring it to a boil with medium-high heat. 3. Once the water starts to boil, switch to low heat. Add the candied winter melon and let it simmer for 30 mins. 4. Add rock sugar and let it simmer for 15 mins. 5. Remove from heat and serve. If preferred to serve cold, let it cool before storing them in the fridge for 1-2 hours.

Chinese Tomato Egg Drop Soup 鸡蛋西红柿汤
Ingredients (serves 2) 2 tablespoons oil 1 large or 2 small tomatoes 1 cup chicken stock 2 cups water (or more chicken stock) 2 teaspoons light soy sauce 1/2 teaspoon sesame oil 1/4 teaspoon white pepper salt (to taste) 1 egg (beaten) 1 1/2 teaspoons cornstarch (mixed with 2 tablespoons/30ml water) spring onion (finely chopped, optional) coriander (chopped, optional) Steps 1. Heat 2 tablespoons oil in a soup pot over medium low heat. Add the tomato chunks and stir-fry for 5 minutes or until the tomatoes are softened and start to fall apart. 2. Add in 1 cup chicken stock, 2 cups water, 2 teaspoons light soy sauce, 1/2 teaspoon sesame oil, 1/4 teaspoon ground white pepper and salt to taste. 3. Bring to a boil, and then lower the heat so that the soup is simmering with the lid on. 4. Now quickly beat the egg in a small bowl and prepare the cornstarch slurry in a separate bowl. 5. Use a ladle to slowly swirl the soup in a whirlpool motion. Keep swirling as you pour in the cornstarch slurry until well incorporated. 6. Now pour a thin stream of egg into the middle of the whirlpool as you slowly swirl the soup. This is how you get that pretty egg drop effect. 7. Serve hot or at room temperature. Ladle the soup into bowls and garnish with chopped scallions and cilantro, if using.
